What to eat?

Quang Noodles

Quang noodle soups differ than most normal noodle soups in that the soups have just enough broth to barely cover the noodles. What makes Quang noodle soups unique is the richness of the broth, the lack of it and the crushed peanut toppings on the noodles.A bowl of Mi Quang contains a rich layer of vegetables at the bottom, followed by noodles and a fair amount of broth. Unlike many other Vietnamese noodle soup bowls which are usually covered completely by their broths, Mi Quang broth is added just enough to barely soak the noodles. Last but not least, Mi Quang cannot go without the toppings of crushed roasted peanuts, rice crackers, herbs, lemons, and chili.

Nam O Fish Salad

Not many people dare to try this dish because it is made from raw fish. However, once you tried it, you get addicted to it. Nam O raw fish salad can be made from sardines, anchovies, etc. However, the tastiest and appropriate fish for this dish is small herrings. Small herrings which are larger than fingers are removed head, fish-tail, belly, bone, then split into two pieces and sliced. After that, they are drained and marinated in ginger, galangal, minced garlic and roasted corn powder.The fish juice is boiled then mixed with Nam O fish sauce, chili, tapioca, sodium glutamate to create a unique sauce for the salad. The real Nam O raw fish salad is sold in Nam O village, not anywhere else. Otherwise, you can try it in Nguyen Tat Thanh St. or Nam O Bridge with 40,000 Vnd per helping.

Bun Cha Ca Da Nang

Bún Chả Cá is one of the most popular fish noodle soups in Vietnam. It comes in many different regional variations. The most common ones are Bún Chả Cá Nha Trang, Bún Chả Cá Da Nang and Bún Chả Cá Hanoi. Probably the biggest differentiator among these variations is either the inclusion or exclusion of some key ingredients and the slightly different taste of the broth.Bún Chả Cá Da Nang is considered by most people to be lighter and sourer tasting, sometimes a little acidic but usually not very fishy.
